Winemaking
Hand-harvested in late September. Destemmed and fermented as red wine at controlled temperature for 10–12 days. Aged in stainless steel for 6 months, followed by 3 months in bottle.
Tasting notes
Brilliant ruby red. Notes of ripe red fruits with spiced hints. Savoury and harmonious on the palate, with soft tannins and a persistent finish.
Food pairing
Ideal with cured meats, medium-aged cheeses, pasta with ragù and white meats.
